I woke yesterday knowing my body was fighting off a bug. I don’t want to be ill at this time of the year so the first thing I did was buy a few key ingredients and made a massive amount of fresh soup. I’ll eat this for the next day or so and freeze the rest in individual portions so I have a good supply of healthy, immune-boosting soup throughout the lead up to Christmas.

This is one of my favourite soups that I regularly make as it’s so easy and tastes deliciously rich and comforting. It also contains a lot of coconut milk which is not only really anti-viral and nutrient dense, but also keeps us full for longer because of the good fats it contains. The interesting thing about these fats is that your body uses them for energy so they don’t increase weight gain. I try to have some coconut oil as often as possible but when I feel I’m coming down with something, it’s one of the first things I grab.

Butternut squash is also great as its one of the best plant sources of vitamin A which is vital for a healthy immune system. It’s also packed full of antioxidants and helps maintain the integrity of the skin – meaning we can look glowing at Christmas (and fit into that dress).

I sort of cheated with this one because I wasn’t feeling well and used a jar of Thai green curry paste rather than making my own but I thought I’d share it with you as it means the soup is really quick to prepare and hassle-free which is a winner when the sofa is calling and you want to minimize time in the kitchen.

I always have a store of homemade chicken stock in the freezer, especially in winter, which is so powerful for our immune systems.

Instructions
  1. Peel and roughly chop all the vegetables. Heat the coconut oil in a large pan. Add the onions, carrots and celery, saute until the onions are softened.
  2. Add the green curry paste and coat the vegetables before adding the squash, ginger and garlic. Saute for 3 minutes.
  3. Pour in the chicken stock, stir well and cover the pan. Leave to simmer for around 20 minutes
  4. Add in the coconut milk, heat until almost boiling and blend until smooth and creamy.
