Ingredients
- 1 carrot grated
- 1 courgette grated
- 1 apple grated
- 1 cup wholegrain flour
- 1 cup oats
- 1/2 cup mixed dried fruit chopped
- 1/2 cup desiccated coconut
- 3 tbsp coconut oil
- 1/2 cup chia seeds
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp allspice
- 1 cup apple juice

Instructions
- Place the chia seeds in a small bowl and add a cup of water. Leave to soak for 15 minutes to form a gel.
- Meanwhile combine all the other ingredients except the apple juice. Add the chia gel and keep adding the juice until you have a lumpy, sticky, doughy consistency.
- Place in a muffin or cupcake cases and bake in the oven at 180 degrees celsius for around 25 minutes or until golden.
- Leave to cool in the tray if you have the willpower not to eat them hot out of the oven!
