Easy Breakfast Pancakes
Ingredients
- 1 cup spelt flour
- 1 cup coconut milk or other milk
- 1 apple or pear, grated
- tbsp chia seeds optional
- 1 egg
- 0.25 tsp butter or coconut oil, per pancake
- 1 tsp ground cinnamon
Servings: pancakes
Instructions
- Sieve the flour and cinnamon into a mixing bowl
- Make a well in the centre and add the egg, mixing together with the flour
- Add the milk slowly, whisking with a spoon or electric mixer to make a batter
- Stir in the grated fruit and chia seeds
- Heat oil in a small frying or pancake pan, swirl it around and ladle in a spoonful of batter
- Swirl the batter around until it covers the base of the pan and place on the heat for a minute or so. Gently lift the edges of the pancake with a spatula and if set, flip over for another 30 seconds until pancake is golden on both sides
- Place on a plate, add fillings and either roll and eat with fingers (children) or enjoy flat with a knife and fork (adults)
