Make a well in the centre and add the egg, mixing together with the flour
Add the milk slowly, whisking with a spoon or electric mixer to make a batter
Stir in the grated fruit and chia seeds
Heat oil in a small frying or pancake pan, swirl it around and ladle in a spoonful of batter
Swirl the batter around until it covers the base of the pan and place on the heat for a minute or so. Gently lift the edges of the pancake with a spatula and if set, flip over for another 30 seconds until pancake is golden on both sides
Place on a plate, add fillings and either roll and eat with fingers (children) or enjoy flat with a knife and fork (adults)
