  1. Wash the watercress, mint and spring onions.
  2. In a large bowl combine the watercress, watermelon chunks, mint and spring onions.
  3. Crumble over the feta cheese and sprinkle with the walnuts.
  4. In a small bowl mix the oil with the balsamic vinegar, add black pepper and pour over the salad until the leaves are well coated.
