Lamb Koftas
Ingredients
Lamb Koftas
- 500 g minced lamb
- 50 g pine kernels
- 3 tbsp oregano leaves
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 red onion finely chopped
- 1 clove garlic crushed
- 1 drizzle olive oil extra virgin
To serve
- 4 tbsp natural Greek yogurt
- 0.5 lemon juice
- 4 cm cucumber grated
- 1 pinch black pepper
- 1 handful rocket
- 4 pitta breads wholemeal

Instructions
- Crush the garlic and set aside.
- Toast the pine kernals in a dry frying pan for several minutes until golden brown
- Mix all kofta ingredients in a mixing bowl and squash together, forming small round balls.
- Mix the yogurt, lemon juice, cucumber and black pepper together in a bowl.
- Heat the olive oil and pan fry the koftas for several minutes until golden on each side, and cooked in the middle.
- Serve the lamb koftas drizzled with yogurt, and packed into a pitta with rocket leaves.
