These luscious strawberry creams taste deliciously decadent and naughty but they are actually healthier than any shop bought chocolates and so easy to make. Why not share the love this Valentines Day by making your own bespoke chocolates?

Not only do they make great Valentines gifts, they are also heart healthy thanks to the chocolate and strawberries. Studies repeatedly show that dark chocolate benefits our health – particularly cardiovascular health – reducing cholesterol, blood pressure and platelet aggregation. In short, it’s really good for us!

Dark chocolate is also believed to help balance blood sugar levels – despite the sugar that’s added to it! Good quality chocolate has a higher antioxidant potential than most fruit and veg, including blueberries, cherries and broccoli. But, try to buy organic chocolate – the cacao tree is notoriously difficult to grow and so the cocoa bean is one of the highest pesticide-laden crops.

We also love strawberries, not only do they taste amazing but they are one of the top Vitamin C containing fruits – and are higher in phytonutrients and antioxidants than most other fruits. They provide cancer protection, support cognitive (brain) function and help to reduce cardiovascular risk in a variety of ways. They’re also great at supporting a balanced blood sugar level.

heart mouldWe used a bar of dark chocolate in this recipe but it’s actually really easy to make your own chocolate too using cacao butter (see our recipe here). Ditto on the nut butter, we have simple recipe or you can use a jar. We love cute moulds and have built up quite a collection (this heart tray was £2 on amazon) but if you don’t have a mould, you can also use ice cube trays.

And a quick word of warning, it’s best to store the chocolates in the fridge or freezer to keep the filling firm, it’s the coconut oil that holds it together and that can melt in warmer temperatures.

Ingredients

Instructions
  1. Place all the filling ingredients in a processor and whizz until a smooth paste has formed.
  2. Break up the chocolate and melt in a glass bowl over a pan of boiling water. Stir with a fork until smooth.
  3. Pour about half a teaspoon of melted chocolate into each mould and then tip the mould around to ensure the sides are coated in chocolate - I also like to use the back of a spoon to make sure all the sides are equally covered.
  4. Put the chocolate moulds in the fridge for 10 minutes to harden. Then fill each mould to almost the top with the strawberry paste. Freeze for 10 minutes.
  5. You may need to gently reheat the remaining chocolate if it has hardened too much. Take the moulds out of the freezer and carefully cover each strawberry filling with a layer of chocolate.
  6. Place in the fridge to set. These chocolates should be kept in the fridge until serving to keep the strawberry filling firm.
