Black Bean, Jalapeño, Lime and Coriander Dip
Ingredients
- 1 tin black beans turtle beans, drained
- 1 jalapeño chopped, de-seeded - or chilli pepper
- 1 lime juiced
- 1 small red onion chopped
- 1/2 tsp ground cumin
- 1 clove garlic crushed
- 1 tbsp olive oil extra virgin, plus extra for sautéing
- 2 handfuls coriander leaves, chopped

Instructions
- Crush garlic and set aside
- Saute onion for a few minutes in olive oil, until softened and then add jalapeño, cumin and garlic for another minute
- Process with the beans, lime juice, olive oil and 1 handful of coriander
- Stir the remaining coriander into the dip to serve
