Gluten free healthy pancakes
Ingredients
- 50 g buckwheat flour
- 50 g ground almonds
- 25 g ground chia seeds
- 260 ml coconut milk (carton) or any milk
- 1/2 tsp baking powder
- 1 egg
- 1 tbsp coconut oil or butter

Instructions
- In a large bowl mix all the ingredients together either with a fork or a whisk.
- If using chia seeds they soak up a lot of the liquid so you may find you need to add a little more milk to get a silky, creamy consistency.
- Heat a frying pan and melt a little of the coconut oil. Use 2 tbsp batter to make each pancake. You may need to gently shape them with the back of a spoon.
- Cook for about 3 minutes on each side.
