Nettle Soup Recipe
Ingredients
- 1/2 carrier bag young nettle leaves washed
- 250 grams jersey royal potatoes washed, roughly chopped
- 11/2 pints chicken stock
- 1 bunch spring onions roughly chopped
- 1 tbsp olive oil or knob of butter

Instructions
- Chop the garlic and set aside
- Sauté the spring onions in a large saucepan in the olive oil until just softened before adding the garlic and stirring for another minute
- Add the new potatoes, chicken stock and bring to a boil
- Simmer for 15 minutes or until the potatoes are tender, and stir in the nettle leaves.
- Simmer for another minute - until the leaves have wilted
- Blend into a soup and enjoy!
