This healthy nettle soup recipe is easy to make in bulk and freeze – the addition of new potatoes including the skins adds fibre, more Vitamin C and potassium.

Instructions
  1. Chop the garlic and set aside
  2. Sauté the spring onions in a large saucepan in the olive oil until just softened before adding the garlic and stirring for another minute
  3. Add the new potatoes, chicken stock and bring to a boil
  4. Simmer for 15 minutes or until the potatoes are tender, and stir in the nettle leaves.
  5. Simmer for another minute – until the leaves have wilted
  6. Blend into a soup and enjoy!
