A healthy, inexpensive snack to make at home

You can buy packets of little seaweed ‘thins’; they’re undeniably tasty and convenient snacks. However, I do feel a little ripped off at paying nearly £2 for three tiny packets of seaweed squares, delicious though they are. It’s so easy to make them cheaply yourself with sheets of sushi nori that I’ve resolved to stop buying them. It takes a matter of minutes to whip up a batch of 64 squares.

Seaweed is rich in trace minerals and is wonderful for supporting the liver’s detox pathways. It’s also rich in iodine, a mineral that many of us can be deficient in, and which helps to support a normal thyroid function. As iodine isn’t found in high amounts in many foods, a little seaweed each day ensures a regular iodine intake.

Yet it’s not always easy to get seaweed into the diet – especially for children. This all changes with our seaweed squares – they’re so addictive, they don’t last long at all. We use black and white sesame seeds on top of the seaweed squares – sesame seeds are the seed highest in phytosterols, so can be particularly beneficial if you’re looking to normalise cholesterol levels.

Instructions
  1. Whisk oil and soy sauce together
  2. Lay out one sheet of nori, and use a pastry brush to brush the oil and soy mixture over it.
  3. Sprinkle 1 tsp of sesame seeds over the sheet, and put another sheet on top. Repeat the oil and seed procedure.
  4. Cut your stack of seaweed into 16 (cut into 4 long strips and each of these strips into 4).
  5. Separate into individual squares and lay them onto two baking stones or baking trays
  6. Cook in a preheated oven at 170 degrees C for 6-8 minutes or until crispy
