Gluten free healthy pancakes
ground chia seeds
coconut milk (carton)
or any milk
In a large bowl mix all the ingredients together either with a fork or a whisk.
If using chia seeds they soak up a lot of the liquid so you may find you need to add a little more milk to get a silky, creamy consistency.
Heat a frying pan and melt a little of the coconut oil. Use 2 tbsp batter to make each pancake. You may need to gently shape them with the back of a spoon.
Cook for about 3 minutes on each side.
